This recipe can be made using lots of different combinations of nuts, seeds and vegetables. Try it for Christmas or Easter as an alternative centerpiece.

Ingredients

  • 4 dashes of pepper
  • 2 onions, chopped
  • 60 g of celery, chopped
  • 100 g of walnuts
  • 1 tsp of dried basil
  • 1 tsp of dried oregano
  • 100 g of sunflower seeds, finely ground
  • 600 ml of soy milk
  • 325 g of breadcrumbs
  • 1 dash of salt

Method

  1. Step 1

    Preheat oven to 180 C / Gas 4 . Lightly oil a dish.
  2. Step 2

    In a medium frying pan, gently cook the chopped celery and the onion in 3 teaspoons of water until softened.
  3. Step 3

    In a large mixing bowl combine the cooked celery and onion with walnuts, ground sunflower seeds, soy milk, basil, oregano, breadcrumbs and season with salt and pepper to taste; mix well. Place mixture in the prepared dish.
  4. Step 4

    Bake for 60 to 90 minutes; until the nut loaf is cooked through.
