Turmeric Pork Skewers with Supergrain Salad

Ingredients
- 4 tablespoons of freshly chopped mint
- 100 g of baby spinach, or rocket leaves
- 2 garlic cloves, peeled and finely chopped (or 2-3 teaspoons garlic purée)
- 2 tablespoons of freshly chopped parsley
- 200 g of bulgur wheat
- 1 tbsp of low fat greek yogurt
- 2 tsps of ground turmeric
- 1 380g pack pork loin medallions, fat removed and cut into 1.5cm cubes
- 50 g of dried apricots, roughly chopped (optional)
- 100 g of fresh pomegranate seeds
- 1 tsp of vegetable oil
- 1 zest and juice of 1 small lemon
Method
Step 1
In a shallow bowl, mix together the marinade ingredients and season. Add the pork, stir to coat, cover and set aside for 10 minutes.Step 2
Cook the bulgur wheat according to the packet instructions, drain, cool slightly then add the remaining salad ingredients. Season. Cover and set aside.Step 3
Preheat the grill to moderate. Thread the pork equally onto four medium metal and cook under a moderate grill for 10 minutes, turning the skewers regularly until brown all over and any juices run clear. Serve with the supergrain salad.
