Ingredients

  • 2 Sirloin steaks
  • 3-4 Jacket Potatoes
  • 200g double cream
  • 150g butter
  • 140g Henderson's relish
  • 80g fresh watercress
  • 2 garlic cloves, crushed
  • 3-4 sprigs fresh thyme
  • 2 tbsp rice wine vinegar
  • 1 tsp dijon mustard
  • Selection of fresh herbs, a good handful
  • 1 tbsp cracked black pepper, crushed
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Method

  • Step 1

    Microwave the jacket potatoes for 8 minutes, cut them into chunky chips, and set them aside.
  • Step 2

    Season the steaks with salt and pepper before rubbing them with olive oil.
  • Step 3

    Place the steaks fat-side down in a hot frying pan to render and crisp the fat, then turn them onto their sides to sear until a dark crust forms.
  • Step 4

    Drain the collected beef fat from the pan over the chips and set them to cook in an oven or air fryer at 200°C for 6 to 8 minutes until golden.
  • Step 5

    Reduce the pan heat and add butter, thyme, and crushed garlic, moving the steaks constantly to coat them thoroughly.
  • Step 6

    Transfer the steaks to a tray and pour over the pan juices and aromatics to rest.
  • Step 7

    Blend a handful of watercress and assorted green herbs with a teaspoon of Dijon mustard, rice wine vinegar, and olive oil until smooth, adjusting with water or oil for your preferred consistency and seasoning with salt and pepper.
  • Step 8

    In the same frying pan, bring Henderson’s relish to a boil before stirring in the cream and an optional half teaspoon of mustard.
  • Step 9

    Add cracked black pepper gradually to taste, then return the steaks and their resting juices to the pan to sit for two minutes.
  • Step 10

    Serve the steak with the crispy chips and the remaining watercress tossed in a light coating of the herb dressing.
