Spiced Crab and Sweetcorn Soup

Ingredients

  • 2 cloves of garlic, peeled and crushed
  • 400 g of potato, peeled and diced
  • 1 small of onion, peeled and finely chopped
  • 1 tbsp of sunflower oil
  • 170 g of crab meat
  • 150 g of sweetcorn, drained
  • 1.5 litres of fish stock, 1½ litres fish stock, made from cubes, follow the instructions on the packet
  • 2 tbsp of fresh coriander, chopped 10g
  • 2 tbsp of sweet chilli sauce

Method

  1. Step 1

    Heat the oil in a saucepan and add the potato, onion and garlic. Cook for 5 minutes, stirring until the onion has softened but not browned.
  2. Step 2

    Add the stock, bring to the boil, cover and simmer for 12 minutes. Then using a stick blender, blitz until smooth.
  3. Step 3

    Add the sweetcorn, crab meat and chilli sauce. Stir well and heat through for 3-4 minutes. Toss in the coriander and serve.
