Seared Steak Salad with Blue Cheese, Pecan & Pears

Indulge in a restaurant-style steak salad recipe that perfectly balances sweet, salty, and savoury flavours. This dish pairs juicy, pan-seared sirloin steak with creamy Stilton, crisp pears (or apples), and crunchy caramelised pecans. Finished with a quick-pickled celery for a tangy kick, it’s a sophisticated blue cheese and pear salad that’s impressive enough for guests but easy enough for a 25-minute weeknight treat.

Ingredients

  • 2 Sirloin steaks
  • 30g pecan nuts
  • 100g the Best Stilton Cheese
  • 60g celery
  • 1 apple or pear, peeled and sliced
  • 100g white wine vinegar
  • A good handful of mixed salad leaves
  • 10g salt
  • 10g sugar
  • A pinch of cracked black pepper
  • Herb dressing, to serve

Method

  • Step 1

    Caramelise the pecans in a hot pan, add a little butter and a tablespoon of caster sugar, allow the sugar to start and melt and caramelise and toss in the pecan nuts. Coat well with the sugar and place onto a tray to cool until needed.
  • Step 2

    To pickle the celery, add the vinegar, sugar, and salt into a pan with a splash of water and bring to the boil (add a little cracked black pepper, some pickling spices would work well here too). Remove from the heat and allow to cool. Peel the stringy bits of the outside of the celery and chop. Add to the cooled pickling juice until needed.
  • Step 3

    Peel and chop the pear (or apple) and toss in a little vinegar or apple juice to stop it from browning, keep to one side till needed, and crumble some blue Stilton.
  • Step 4

    Sear the steaks in a really hot pan like the sirloins or with a blow torch, allow to rest for 2-3 minutes.
  • Step 5

    Slice the steaks at an angle and place them into a large bowl, dress the salad leaves with a little oil and vinegar (or some herb dressing), add the chopped apple and crumbled blue cheese. Then roughly chop some of the pecan nuts and mix all together.
  • Step 6

    Serve in a bowl and finish with a few more slices of beef, crumpled blue cheese and some chopped pecan nuts.
