Ingredients

  • 0.5 cube of vegetable stock cube
  • 300 g of brown rice, for serving
  • 1 cup of coconut milk
  • 1.5 tablespoons of red curry paste
  • 2 tsp of stir fry oil
  • 1 tofu, cut into cubes
  • 6 cloves of garlic, miced
  • 0.5 piece of fresh ginger, peeled and diced small
  • 1 handful of spring onions
  • 2 cups of potatoes, peeled and diced
  • 3 cups of carrots, diced

Method

  1. Step 1

    Heat the oil in a pan on a medium heat, then add the tofu for about 5 minutes.
  2. Step 2

    Combine all the ingredients including 2 cups of water in a slow cooker and mix.
  3. Step 3

    Cover and cook on high for 4 hours.
  4. Step 4

    Serve with rice, sprinkle a handful of spring onion on top and season to taste.
