Pork Fillet with a Parmesan Crust

Ingredients
- 4 tbsp of thyme leaves
- 3 tbsp of dijon mustard
- 2 pork fillets, 500g, tenderloin
- 200 g of sourdough bread
- 50 g of parmesan cheese, grated
Method
Step 1
Preheat the oven to 180C fan/200C/gas 6.Step 2
Trim any excess fat and silver skin from the pork fillets.Step 3
Place the sourdough into a food processor. Blitz to fine breadcrumbs.Step 4
Add the Parmesan cheese, thyme leaves and salt and pepper, blitz to combine. Tip into a large shallow dish.Step 5
Place the pork fillets onto a large baking tray lined with baking parchment.Step 6
Brush the Dijon mustard generously over the fillets.Step 7
Roll the pork fillets in the breadcrumb mix, ensuring each fillet is well coated.Step 8
Place back onto the lined baking tray and bake in the preheated oven for 35-40 minutes, ensuring the fillets are cooked through.Step 9
Serve with fine beans and baby new potatoes.
