Mexican style beans on toast, creamy avocado & homemade tomato salsa

Ingredients
- 4 Slices Sliced Best Bread
- 300g Mixed Beans
- 1 Avocado
- 250g Baby Plum Tomatoes
- 500g Passata
- 1 Red Onion
- 1tbsp Chilli Con Carne Spice
- 1tsp Oil
Method
Step 1
To get started, make the salsa. Chop up the tomatoes and place into a bowl. Peel and finely slice the onion, stir into the tomatoes. Season to taste with a little salt and pepper, set aside.Step 2
Heat a teaspoon of oil in a small saucepan over medium heat. Add the beans and a tablespoon of the chili spice mix, stir and cook for a couple of minutes before adding the passata and 50 ml of water. Season with a little salt and pepper and simmer for 10 minutes, stirring occasionally.Step 3
Slice the avocado in half and carefully remove the stone. Scoop out the flesh and either mash up or chop into chunks.Step 4
Toast your bread and serve with the beans, avocado and salsa.
