High Protein Cheese Muffins

Bake our high-protein cheese muffins! Made with cottage cheese, cheddar & Greek yoghurt, these savoury muffins are fibre-rich, light & fluffy. Perfect for breakfast, lunch, or a snack on the go.

Ingredients

  • 2 Medium eggs
  • 100g Low fat cottage cheese
  • 50g Lower fat grated cheddar
  • 2 tbsp (30g) Fat free Greek yoghurt
  • 80g Wholemeal flour
  • ½ tsp Baking powder
  • ½ tsp Paprika (or black pepper/chives for extra flavour)

Method

  1. Step 1

    Preheat the oven to 180°C (fan 160°C).
  2. Step 2

    Blend the eggs in a food processor or using a whisk or fork until smooth.
  3. Step 3

    Add the cottage cheese and grated cheddar to the blended eggs and mix until well combined.
  4. Step 4

    In a separate bowl, combine the wholemeal flour, baking powder and paprika.
  5. Step 5

    Fold the dry ingredients into the wet mixture (egg, cottage cheese, and cheddar) until just combined. Avoid overmixing.
  6. Step 6

    Spoon the batter into muffin cases, filling each about ⅔ full to allow space for rising.
  7. Step 7

    Bake for 18-22 minutes, or until golden brown and a toothpick inserted into the centre comes out clean.
  8. Step 8

    Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
