High Protein Cheese Muffins

Ingredients
- 2 Medium eggs
- 100g Low fat cottage cheese
- 50g Lower fat grated cheddar
- 2 tbsp (30g) Fat free Greek yoghurt
- 80g Wholemeal flour
- ½ tsp Baking powder
- ½ tsp Paprika (or black pepper/chives for extra flavour)
Method
Step 1
Preheat the oven to 180°C (fan 160°C).Step 2
Blend the eggs in a food processor or using a whisk or fork until smooth.Step 3
Add the cottage cheese and grated cheddar to the blended eggs and mix until well combined.Step 4
In a separate bowl, combine the wholemeal flour, baking powder and paprika.Step 5
Fold the dry ingredients into the wet mixture (egg, cottage cheese, and cheddar) until just combined. Avoid overmixing.Step 6
Spoon the batter into muffin cases, filling each about ⅔ full to allow space for rising.Step 7
Bake for 18-22 minutes, or until golden brown and a toothpick inserted into the centre comes out clean.Step 8
Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
