Ingredients

  • 1 tbsp of cumin seeds
  • 1 tbsp of coriander seeds
  • 1 tbsp of ground cinnamon
  • 1 large bunch of coriander
  • 8 garlic cloves
  • 3 large waxy potatoes
  • 2 large red onions
  • 2 lemons
  • 1 kg of chicken thighs and drumsticks
  • 0 tbsp of dried oregano
  • 100g of butter

Method

  1. Step 1

    Preheat the oven to 200°c/180°c fan/gas mark 62.
  2. Step 2

    Melt the butter in a small saucepan and add the coriander seeds, cumin seeds, ground cinnamon and dried oregano.
  3. Step 3

    Place the chicken, lemon chunks, onions, potatoes and garlic in a large roasting dish and then pour over the melted butter mix.
  4. Step 4

    Rub the butter into all the ingredients, making sure everything is well covered. Season with salt and freshly ground black pepper.
  5. Step 5

    Place into the oven for 35-40 minutes or until the chicken is cooked through and the potatoes are tender. Turn the ingredients over after 15 minutes to prevent burning.
  6. Step 6

    Stir the roughly chopped coriander into the chicken and serve immediately with a Greek salad.
