Greek Lemon Chicken

Ingredients
- 1 tbsp of cumin seeds
- 1 tbsp of coriander seeds
- 1 tbsp of ground cinnamon
- 1 large bunch of coriander
- 8 garlic cloves
- 3 large waxy potatoes
- 2 large red onions
- 2 lemons
- 1 kg of chicken thighs and drumsticks
- 0 tbsp of dried oregano
- 100g of butter
Method
Step 1
Preheat the oven to 200°c/180°c fan/gas mark 62.Step 2
Melt the butter in a small saucepan and add the coriander seeds, cumin seeds, ground cinnamon and dried oregano.Step 3
Place the chicken, lemon chunks, onions, potatoes and garlic in a large roasting dish and then pour over the melted butter mix.Step 4
Rub the butter into all the ingredients, making sure everything is well covered. Season with salt and freshly ground black pepper.Step 5
Place into the oven for 35-40 minutes or until the chicken is cooked through and the potatoes are tender. Turn the ingredients over after 15 minutes to prevent burning.Step 6
Stir the roughly chopped coriander into the chicken and serve immediately with a Greek salad.
