Ingredients

  • 30g Vanilla protein powder
  • 30g Ground almonds
  • 140g Almond butter
  • 21g Honey or maple syrup
  • 16g Desiccated coconut

Method

  1. Step 1

    In a mixing bowl, combine the vanilla protein powder and ground almonds.
  2. Step 2

    Add the almond butter and honey (or maple syrup), then stir until a thick dough forms.
  3. Step 3

    Divide the dough into 9 roughly equal pieces to ensure even portions.
  4. Step 4

    Roll each piece into a ball, about 1 inch (2.5 cm) in diameter.
  5. Step 5

    Spread the desiccated coconut on a plate and roll each ball in it to coat.
  6. Step 6

    Place the protein balls on a plate or tray and refrigerate for at least 30 minutes to firm up.
  7. Step 7

    Enjoy straight from the fridge! Store in an airtight container for up to a week.
