Ingredients
- 1 tin of cannellini beans, drained
- 1 sprig of thyme
- 2 sticks of celery, diced
- 1 whole of onion, diced
- 1 whole of leek, trimmed and sliced
- 1 whole of carrot, peeled and diced
- 1 leaf of bay leaf
- 400 ml of vegetable stock
- 1 tin of butterbeans
- 3 tbsp of tomato puree
- 100 g of cherry tomatoes, halved
- 1 drizzle of olive oil
- 1 tin of chopped tomatoes
- 3 cloves of garlic, crushed
- 1 tbsp of balsamic vinegar
- 2 large handfuls of basil, roughly chopped
Method
Step 1
Drizzle a little olive oil in a large saucepan. Add the diced onion, celery, carrot and leek. Sauté for 5 minutes.Step 2
Add the garlic and cook for 1 minute.Step 3
Add the tomato purée and balsamic vinegar and cook for 1 minute.Step 4
Add the chopped tinned tomatoes, cherry tomatoes, vegetable stock, bay leaf and thyme. Season well and stir to combine.Step 5
Bring to the boil then reduce to a simmer for 20 minutes.Step 6
After 20 minutes, remove the bay leaf and sprig of thyme. Add the cannellini and butter beans, stir to combine and simmer for a further 5 minutes.Step 7
Season to taste. Add chopped basil and stir.
