Ingredients
- 750g carrots, peeled topped and halved lengthways
- 50g butter
- A pinch of sea salt
- A couple of sprigs of fresh thyme
- 300ml water
- 50g dried cranberries
- 250ml cranberry juice
- 150g icing sugar
- 70ml vodka
Method
Step 1
Boil and reduce the vodka, cranberry juice, dried cranberries, and sugar together to create a syrup for the glaze.Step 2
Boil the carrots in a lidded pan along with all of the other ingredients until the carrots are almost tender. You may need to add a little extra water when needed.Step 3
When the carrots are tender, reduce any excess water and add 3-4 tablespoons of the cranberry vodka glaze.Step 4
Bring to the boil and serve.
