Ingredients

  • 750g carrots, peeled topped and halved lengthways
  • 50g butter
  • A pinch of sea salt
  • A couple of sprigs of fresh thyme
  • 300ml water
  • 50g dried cranberries
  • 250ml cranberry juice
  • 150g icing sugar
  • 70ml vodka

Method

  1. Step 1

    Boil and reduce the vodka, cranberry juice, dried cranberries, and sugar together to create a syrup for the glaze.
  2. Step 2

    Boil the carrots in a lidded pan along with all of the other ingredients until the carrots are almost tender. You may need to add a little extra water when needed.
  3. Step 3

    When the carrots are tender, reduce any excess water and add 3-4 tablespoons of the cranberry vodka glaze.
  4. Step 4

    Bring to the boil and serve.
