
Ingredients
- 220 g of salmon
- 3 garlic cloves
- 1 tsp of olive oil
- 1 can of chickpeas
- 1 lime
- 5 g of southern fried seasoning
- 1 head of broccoli
- 15 g of coriander
Method
Step 1
Preheat the oven to 180°C. Chop the coriander, zest the lime and squeeze out half the juice. Crush the garlic. Combine the salmon with the garlic, all the lime zest, half the juice, 1 teaspoon of oil, half the coriander and seasoning to create the marinade. Marinate the fish for 5-10 minutes.Step 2
Set a pan of water to boil. Grate the head of broccoli into a bowl and set aside.Step 3
Wrap the marinated fish in a foil parcel and cook in the oven for 6-8 minutes, then remove the foil and finish off on the BBQ for a further 3-4 minutes, ensuring its piping hot.Step 4
Drain the can of chickpeas and cook with the grated head of broccoli in the boiling water for 3-4 minutes.Step 5
Once the broccoli and chickpeas are cooked, drain and stir in the remaining coriander, southern fried seasoning and serve onto plates. Top with the BBQ salmon and cut the remaining lime into wedges to serve.Step 6
Season to taste.
