Add a little extra fizz to any occasion by preparing this light and luxurious Raspberry Kir Royale. The perfect aperitif, this popular French cocktail is just as easy to enjoy with brunch, or as a fruity nightcap with someone special - Prosecco works wonderfully, but we recommend that you use Champagne for a full measure of indulgence.
- 125g raspberries
- 50ml crème de cassis
- 400ml champagne, use cava for a cheaper alternative

- Preparation time:
- Divide 8 raspberries between 4 Champagne flutes.
- Place the remaining raspberries into a food processor and whizz until smooth, then sieve.
- Stir in the crème de cassis and divide between the glasses. Top up with champagne to make it a real kir royale.
