Get a great energy-boosting start to the day with these delicious breakfast bars - great for kids as well, although you might want to keep them for yourself.

Ingredients

  • 75 g of peanuts, roughly chopped
  • 5 tablespoons of mixed seeds
  • 1 tsp of baking powder
  • 125 g of dates, chopped
  • 3 bananas, mashed
  • 1 egg
  • 150 g of peanut butter
  • 250 g of oats
  • 1 tsp of cinnamon
  • 1 tsp of vanilla extract
  • 0.25 g of salt

Method

  1. Step 1

    Preheat your oven to 190°C (170°C fan) gas mark 5. In a large mixing bowl, mix together bananas,  egg, peanut butter and the vanilla extract.
  2. Step 2

    Add the oats, cinnamon, baking powder, salt, 4 tbsp seeds, dates and peanuts. Mix until all the ingredients are coated.
  3. Step 3

    Press the mixture firmly into a lined large tin, equally spaced and around 3cm deep and garnish with the remaining 1 tbsp of seeds.
  4. Step 4

    Bake for 30-35min until golden brown and firm.
  5. Step 5

    Allow to cool before cutting into bars. Keep the bars in an airlock container.
  6. Step 6

    Eat and enjoy.
