Makes 2 champagne flutes
Ingredients
- 2 passion fruits
- 2 tsp Cointreau
- 250ml prosecco

Instructions
- Cut each passion fruit in half and over a sieve resting on a bowl, scoop out the inside using a teaspoon. Push the pulp into the sieve to squeeze out as much liquid as possible.
- Spoon this juice into the bottom of each glass.
- Add a teaspoon of Cointreau.
- Carefully pour in the prosecco with the glass on a slant. Take it slow or you’ll have passion fruit bubbles everywhere!
