These cute Mother's Day cupcakes let you show the mother-figure in your life how much you care. Cut out letters from fondant icing, write a message with an icing pen, or just sprinkle your mum's preferred topping all over.Time and servings

Ingredients
- 180 g of caster sugar
- 15 g of mini marshmallows
- 2 tsp of vanilla extract
- 90 g of plain flour
- 400 g of buttercream flavour frosting
- 2 large of eggs
- 125 g of butter, melted and cooled
- 150 g of soured cream
- 100 g of ready-to-roll icing
- 90 g of self-raising flour
Method
Step 1
Heat the oven to 180°C/160°C fan/Gas 4. Whisk together the eggs and sugar until light and fluffy then beat in the soured cream, butter, vanilla and a pinch of salt. Gently fold in both flours followed by the marshmallows.Step 2
Half-fill 18 cupcake cases with the mixture and bake for about 20 minutes until cooked through. Remove from the oven and cool.Step 3
Roll out the fondant icing and use cutters to cut out letters and create your own Mother’s Day message. Then, put the frosting in a bowl and stir in a few drops of a food colouring of your choice.Step 4
When the cakes are cold, spread or pipe the frosting on top. Place a letter on each cake and decorate any remaining cakes with mini marshmallows.
