If you fancy giving a tropical twist to your energy snacks, then mix a little lime with a little coconut to add a really refreshing flavour into your day.Time and servings

Ingredients
- 0.5 cup of desiccated coconut
- 1.5 cup of dates
- 3 limes, zest and juice only
- 0.5 cup of almonds
- 0.5 cup of cashews
Method
Step 1
Place the almonds and cashews into a food processor or blender and mix until they are in small pieces.Step 2
Do not mix for too long, you do not want the nuts to turn into a paste.Step 3
Add the dates, lime juice and zest. Mix until the dates are finely chopped and the ingredients start to clump together. Mould the mixture into 1 ½ inch balls.Step 4
Roll the balls in coconut to coat the outside. Keep in an airlock container.Step 5
Eat and Enjoy.
