Ingredients

  • 2 cloves of garlic, peeled and crushed
  • 4 small of flour tortillas
  • 1 egg
  • 1 tsp of ground coriander
  • 50 g of breadcrumbs
  • 1 tsp of cumin seeds
  • 0.5 red cabbage, shredded
  • 1 little gem lettuce
  • 4 tbsp of créme fraiche, use a reduced fat variant for lower calories
  • 1 lemon, cut into chunks
  • 300 g of lamb mince
  • 1 red onion, peeled and very finely chopped

Method

  1. Step 1

    Place the red onion, mince, breadcrumbs, garlic, cumin, coriander and egg into a mixing bowl and season with salt and pepper.
  2. Step 2

    With clean hands, mix thoroughly. Take 4 metal skewers, divide the mince mix into 4 and shape around each skewer.
  3. Step 3

    Grill under a medium heat for 12-15 minutes, turning frequently.
  4. Step 4

    To serve, top a warmed tortilla with a kofta, cabbage, lettuce, crème fraîche and lemon.
