Blueberry, Pistachio and Maple Pancakes
As easy as lemon and sugar but twice as interesting; break from the routine this Pancake Day and top your pancakes with this delicious sweet and fruity recipe. To prepare the pancakes themselves, simply follow our Basic Pancake Mix Recipe.

Ingredients
- 500ml vanilla ice cream
- 200g blueberries
- 60g pistachios, shelled and chopped
- 4 tbsp maple syrup

Instructions
- Make the pancakes, following our basic pancake recipe.
- Scoop balls out of the ice cream and top each pancake with 2 scoops.
- Scatter blueberries and pistachios over the top and drizzle with a tablespoonful of maple syrup.
