How to Make the Perfect Fruit Scones
What you need:
225g self-raising flour
30g caster sugar
75g butter
50g mixed dried fruit
1 egg
50ml milk plus extra for wash (or buttermilk for a richer taste)
A pinch of salt
...Makes 8 Scones!

These instructions are given as a guide.
1. Set your oven to 200°C/400°F/ Gas Mark 6 and leave it to warm up.
2. Place the flour, salt and sugar in a mixing bowl, dice the butter and rub into flour mix with your fingers until it looks like breadcrumbs.
3. Stir in your dried fruit then add the beaten egg and milk, mix by hand until it forms a dough.
4. Place the mix on a lightly floured surface and roll out with a rolling pin until it's about 2cm thick.
5. Cut the dough into rounds using a pastry cutter (2 1/4 inch).
6. Place on a baking tray, wash with milk or beaten egg and bake for 12-15 minutes until your scones are risen and golden.
7. Leave to cool, add your favourite fillings and enjoy!
