Coconut Macaroons
2 Egg Whites
150g Desiccated Coconut
100g Caster Sugar
Zest of 1 Lime
100g Dark Chocolate
Preheat the oven to 180°C (Fan 160°C/gas mark 4)
Mix the egg whites, sugar and coconut together with a fork to make a soft paste. Stir the lime zest.
Shape into 8 small mounds on a lined baking tray and bake for 12 minutes until very slightly browned.
Dip the cooled macaroons in melted chocolate. Allow to set on greaseproof paper.
