Whole Salmon Fillet with Orange and Mint Crust

This whole salmon dish is a real centrepiece. Try it at your next dinner party and really wow your guests. Time and servings

Ingredients
- 3 tbsp of mint, chopped
- 1 kg of whole salmon fillet, skin removed (your Morrisons fishmonger can do this for you)
- 75 g of breadcrumbs
- 1 orange, grated zest and juice
- 2 tbsp of olive oil
Method
Step 1
Preheat the oven to 160C fan/180C/gas 4.Step 2
Place the salmon fillet on a large baking tray or roasting tin. Trim the fillet if needed.Step 3
Cover the baking tray loosely with tin foil and bake in the preheated oven for 30 minutes.Step 4
Meanwhile, place the breadcrumbs, mint, olive oil, and some salt and pepper into a mixing bowl.Step 5
Zest the orange into the mixing bowl. Cut three slices of orange and set to one side for garnish. Squeeze the juice from the remaining orange into the mixing bowl.Step 6
Stir well to combine.Step 7
Once the salmon has cooked for 30 minutes remove from the oven. Discard the tin foil and sprinkle the breadcrumb mixture over the salmon. Cut the reserved orange slices in half and arrange on top of the breadcrumbs.Step 8
Bake in the preheated oven for a further 20 minutes. Ensure the salmon is cooked by checking the thickest part is piping hot.Step 9
Serve hot or cold, great for a buffet.
