Whole Cauliflower Tikka Masala With Cheesy Naans

You could easily make this with florets, just reduce the cooking time and bake until golden and tender.

Ingredients

  • 1 Morrisons Large Cauliflower
  • ½ 180g jar Morrisons Tikka Masala Curry Paste
  • 200g Morrisons Mature Cheddar, grated
  • 2 Morrisons Plain Naan Bread
  • 1 lime, cut into wedges
  • 1 red chilli, deseeded and finely chopped
  • 4tbsp fresh coriander, roughly chopped
  • 1 clove garlic, crushed
  • 2tbsp unsalted butter, melted
  • 3tbsp semi-skimmed milk

Method

  1. Step 1

    Bring a large pan of water to the boil. Remove any tough outer leaves from the cauliflower and carefully lower into the water. Season and boil for 15 mins, then drain and allow to cool slightly.
  2. Step 2

    Meanwhile, preheat the oven to 200°C/180°C fan/gas 6. Mix the curry paste together with ¼ of the cheese, the milk and half of the coriander. Once cooled, use clean hands to cover the cauliflower in the paste. Place into a roasting tin and roast in the oven for 20-25 mins until golden.
  3. Step 3

    Combine the melted butter with the garlic and half the remaining coriander. Brush over the top of the naans then scatter with the red chilli and remaining cheese. Pop onto a lined baking tray and bake in the oven for the last 6-8 mins until the cheese is gold and bubbling.
  4. Step 4

    Slice the naans to serve alongside the cauliflower. Serve with the lime wedges and remaining coriander.

    TOP TIP: don’t chuck out the cauli leaves! Roast with oil and spices to toss into your favourite grains – we like bulgur wheat or rice.
