Ingredients

  • 1 Morrisons small watermelon, peeled
  • 1 tbsp apple cider vinegar
  • 5 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tsp siracha
  • 2 tbsp sesame seeds (we like to use a mixture of white and black)

Method

  1. Step 1

    Heat oven to 180°C/160°C fan/gas 4. Half the watermelon and slice into ½-1cm slices. Place the slices, slightly overlapping in a deep baking dish (as a lot of water is produced). Pour over 1 tablespoon of the soy sauce, the apple cider vinegar and half of the sesame oil and toss so they’re coated.
  2. Step 2

    Bake for 40 mins until the watermelon is soft. Leave to cool completely.
  3. Step 3

    Mix the remaining soy sauce, sesame oil and sriracha together and serve in a small bowl. Once the watermelon is cool, place onto a plate, sprinkle with the sesame seeds and serve with the dipping sauce on the side.
