Warm Spiced Salad with Orange Dressing & Rice

A warming roasted vegetable salad with a long grain and wild rice, chickpea mix, served with a sweet orange dressing.

Ingredients

  • 2 tsp of olive oil
  • 220 g of long grain & wild rice
  • 180 g of chickpeas
  • 1 orange
  • 5 g of smoked paprika
  • 1 red onion
  • 2 carrots
  • 1 courgette
  • 80 g of kale

Method

  1. Step 1

    Preheat the oven to 180°C. Slice the carrot into 2cm pieces and roughly chop the courgette, kale and red onion.
  2. Step 2

    In a mixing bowl, mix the vegetables together with the paprika, 2 teaspoons of olive oil and season to taste.
  3. Step 3

    Place the vegetables on a roasting tray and cook in the oven for 20 minutes, or until the kale becomes crispy.
  4. Step 4

    Open the chickpeas and drain, reserving the liquid. Zest or grate the orange and squeeze the juice into the chickpea water, season to taste.
  5. Step 5

    Add the dressing and chickpeas to a small pan and heat for 2-3 minutes until the chickpeas are warmed through. Cook the rice to packet instructions. Strain the chickpeas and mix them into the rice, setting the warm orange dressing aside.
  6. Step 6

    Spoon the rice and chickpeas onto a plate and place the roasted vegetables on the side. Serve with the warm dressing. Season to taste.
