Warm Spiced Salad with Orange Dressing & Rice

A warming roasted vegetable salad with a long grain and wild rice, chickpea mix, served with a sweet orange dressing.Time and servings

Ingredients
- 2 tsp of olive oil
- 220 g of long grain & wild rice
- 180 g of chickpeas
- 1 orange
- 5 g of smoked paprika
- 1 red onion
- 2 carrots
- 1 courgette
- 80 g of kale
Method
Step 1
Preheat the oven to 180°C. Slice the carrot into 2cm pieces and roughly chop the courgette, kale and red onion.Step 2
In a mixing bowl, mix the vegetables together with the paprika, 2 teaspoons of olive oil and season to taste.Step 3
Place the vegetables on a roasting tray and cook in the oven for 20 minutes, or until the kale becomes crispy.Step 4
Open the chickpeas and drain, reserving the liquid. Zest or grate the orange and squeeze the juice into the chickpea water, season to taste.Step 5
Add the dressing and chickpeas to a small pan and heat for 2-3 minutes until the chickpeas are warmed through. Cook the rice to packet instructions. Strain the chickpeas and mix them into the rice, setting the warm orange dressing aside.Step 6
Spoon the rice and chickpeas onto a plate and place the roasted vegetables on the side. Serve with the warm dressing. Season to taste.
