Vegetarian Gravy

Ingredients
- 2 garlic cloves, crushed
- 4 dashes of pepper
- 1 litre of vegetable stock
- 1 large onion, sliced
- 110 g of butter
- 2 dashes of salt
- 60 g of plain flour
Method
- Step 1Melt butter and add the onions. Cook over a medium-high heat until onions and butter are browned. Stir in garlic and cook a few more minutes.
- Step 2Reduce heat to medium and stir in flour with a fork. Add vegetable stock a spoonful at a time, stirring constantly until desired thickness is reached.
- Step 3Simmer on low 5 minutes, adding salt and pepper to taste.
- Step 4Sieve the onions if you prefer a smoother consistency. Serve hot, or you can save for later and put it in the freezer.
