Ingredients
- 2 tbsp of olive oil
- 500 ml of tomato passata
- 1 lime, juice
- 200 g of spinach
- 900 g of root vegetables
- 220 g of Alpro Plain No Sugars Yoghurt Alternative
- 2 onions
- 1 handful of fresh coriander
- 2 tbsp of curry paste
Method
Step 1
Peel the veggies and cut into equal sized chunks.Step 2
Next, heat the oil and fry the curry paste for two minutes. Add all the veggies (except the spinach), tomato passata, 600ml water and coriander.Step 3
Leave to simmer for 20-30 minutes on a low heat, stirring frequently until the potatoes are soft. Then add the spinach and Alpro Plain Unsweetened and simmer for a further 2 minutes to allow the spinach to wilt.Step 4
Squeeze a little lime juice over the top and serve with an extra dollop of Plain Unsweetened and a sprinkling coriander leaves.
