Vegan Meringues

Easy to make, this recipe for vegan meringues is a real treat served with fruit or vegan cream.

Ingredients

  • 500 g of soy or coconut whipping cream to serve, you could even use a coconut yoghurt and fruit of your choice.
  • 150 g of caster sugar
  • 0.75 tsp of cream of tartar
  • 400 g of tin chickpea water, known as Aqua Faba

Method

  1. Step 1

    Whisk the aqua faba/chickpea water with a little cream of tartar until it forms stiff peaks.
  2. Step 2

    Add the sugar a little at a time until the mix is stiff and glossy. This could take a lot longer than a usual meringue - around 10-15 minutes of whisking altogether.
  3. Step 3

    Put the mix into a piping bag and pipe into little nests.
  4. Step 4

    Bake at 110oc for about 1 hour 30 minutes.
  5. Step 5

    Allow to cool completely before using.
