Vegan Linguine with Olives and Tomatoes

Ingredients
- 10 cherry tomatoes
- 150 g of linguine, or spaghetti
- 1 handful of fresh basil
- 50 g of black olives, pitted
- 1 can of tinned tomatoes
- 2 tsp of olive oil
Method
- Step 1In a large pan, cover the pasta with a tin of tomatoes.
- Step 2Refill the tin halfway with water and add to the pan. Bring it to the boil and simmer.
- Step 3Keep stirring whilst the pasta softens.
- Step 4Chop the tomatoes, halve the olives and add to the pan with sugar and olive oil. Stir well, cover with the lid and cook on a medium heat for 10 minutes.
- Step 5Chop the basil. Stir in the basil and black pepper to serve.
