Vegan Linguine with Olives and Tomatoes

Ingredients

  • 10 cherry tomatoes
  • 150 g of linguine, or spaghetti
  • 1 handful of fresh basil
  • 50 g of black olives, pitted
  • 1 can of tinned tomatoes
  • 2 tsp of olive oil

Method

  1. Step 1

    In a large pan, cover the pasta with a tin of tomatoes.
  2. Step 2

    Refill the tin halfway with water and add to the pan. Bring it to the boil and simmer.
  3. Step 3

    Keep stirring whilst the pasta softens.
  4. Step 4

    Chop the tomatoes, halve the olives and add to the pan with sugar and olive oil. Stir well, cover with the lid and cook on a medium heat for 10 minutes.
  5. Step 5

    Chop the basil. Stir in the basil and black pepper to serve.
