
Valentine's Day Love Bug Cupcake

Spend some quality time with your little ones this Valentine's Day and have a go at these adorable little Love Bug cupcakes.Time and servings

Ingredients
- 250g self raising flour
- 250g caster sugar
- 1/2 teaspoon bicarbonate of soda
- 750g soft salted butter (250 for cake mix, 500 for icing)
- 4 large eggs
- 75ml milk (45ml for cake mix, 30ml for icing)
- 1 tsp vanilla extract
- Filling of your choice - we chose jam but Nutella or Caramel would be great.
- 650g icing sugar
- Red and pink gel icing
- 1/3 pack modelling icing - about 80g
- Red gel food colouring
- Cocktail sticks
- Heart shaped cutter or a small craft knife
- Piping bags
- Grass icing tip
- Edible eyes
Method
12 stepsFor the cupcake:
Step 1
Preheat the oven to 170°C and line a cupcake tray with 12 cases.Step 2
Add flour, caster sugar and bicarbonate of soda to a mixing bowl. Then add the soft butter and eggs and start mixing with a whisk. Mix until everything is well combined.Step 3
Add milk and vanilla extract and beat for 30 seconds, scrape down the bowl to make sure everything is mixed well.Step 4
Fill all 12 cupcake cases 3/4 full with the mixture.Step 5
Bake for around 22-25 minutes. Leave in the baking tray for 5 minutes then transfer them to a cooling rack.Step 6
When cool, core out the centre of your cupcakes, pipe in a blob of your filling. Replace the top of the cupcake.
For the frosting:
Step 1
Add all the ingredients in a bowl, starting whisking slowly but then whisk on high to achieve a smooth frosting. If you are making two separate colours, split your mix into two bowls and then mix the colour thoroughly into each.Step 2
Fill your piping bag(s) with your chosen colours and pipe a grass/fur texture on the top of your cupcakes using short sharp squeezes on the piping bag; working in circles around the top of the cupcake. Start around the edge and work inwards. You want to overlap each circle to create a layered fluffy look.Step 3
Pop your edible eyes and antennae on to complete your Love Bugs.
For the antennae:
Step 1
Add a small amount of red gel colouring to the modeling icing. Kneed in till you achieve a smooth colour.Step 2
Roll out your icing to the thickness of a 50p. To stop from sticking to your work counter. sprinkle icing sugar underneath it.Step 3
Use a knife/ cutter to cut out heart shapes from the modeling icing. Pop a cocktail stick into the bottom of the heart to create your antennae and set them aside to firm. You will need to make 24 in total.
