Ingredients

  • 300g conchigilie Pasta
  • 500g mince
  • 1 white onion, finely diced
  • 1tsp tomato puree
  • 2tsp paprika
  • 1tsp cumin
  • 1 clove garlic, crushed
  • Salt
  • Black pepper
  • 150g greek yoghurt
  • 200g cherry tomatoes
  • 1 handful parsley
  • 4 tablespoons unsalted butter

Method

  1. Step 1

    Cook the pasta according to package instructions
  2. Step 2

    Whilst the pasta is cooking, fry your diced onion for about 2-3 minutes before adding in the lamb mince. Stir and season with salt and pepper.
  3. Step 3

    Add 1 tsp of paprika, the cumin and tomato puree. Fry for a further 5-10 minutes until the onions are translucent and the mince crispy.
  4. Step 4

    Whilst the pasta and mince is cooking, make your garlic yoghurt and paprika butter.
  5. Step 5

    For the garlic yoghurt, combine greek yoghurt, a pinch of salt and crushed garlic. Mix well.
  6. Step 6

    For the paprika butter, add the butter to a pan and gently heat until melted. Then add 1 tsp paprika and stir thoroughly to combine.
  7. Step 7

    Once the pasta is cooked, remove from the heat and drain. Add to the bottom of your bowl before topping with a healthy dollop of garlic yoghurt. Top with the crispy mince, paprika butter, a handful of cherry tomatoes and a sprinkle of parsley.

    Serve and enjoy!
