Tuna Tomato & Pea Pasta

It uses high-quality tinned tuna and frozen peas to create a fresh, nutritious meal that feels much fancier than its 15-minute cook time suggests.

Ingredients

  • 400g pasta (Penne, Fusilli, or Rigatoni are perfect for this sauce)
  • 2x145g tins John West Tuna, drained
  • 500g passata
  • 200g Birds Eye Garden Peas, frozen
  • 1 large onion, finely diced
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Method

  • Step 1

    Bring a large pot of salted water to a rolling boil. Add the 400g of pasta and cook according to the packet instructions. 3 minutes before the pasta is done, tip the peas into the same pot. Drain together, keeping about half a mug of the starchy pasta water to one side.
  • Step 2

    While the pasta is boiling, heat the olive oil in a large frying pan or shallow casserole dish over medium heat. Sauté the diced onion for 5 minutes until soft and golden.
  • Step 3

    Pour in the passata. Let it simmer gently for 5-7 minutes to thicken and develop flavour. If the sauce looks a little too thick for a family portion, stir in a splash of that reserved pasta water to make it silky and glossy.
  • Step 4

    Gently flake both drained tins of tuna into the sauce (try to keep some chunks intact for texture). Add the drained pasta and peas into the pan and toss thoroughly until every piece of pasta is coated in the tomato sauce. Season generously with black pepper.
  • Step 5

    For a family-sized serving, a big bowl of this looks beautiful topped with finely chopped fresh flat-leaf parsley and some grated mature cheddar or a hard Italian-style cheese over the top before serving.
