This tasty butter bean and kidney bean salad mixed with tuna and a home-made dressing is perfect for lunches or as a summer evening meal.

Ingredients

  • 4 tablespoons of napolina extra virgin olive oil
  • 1 clove garlic, finely chopped
  • 1 sweetcorn, drained
  • 150 g of cherry tomato, halved
  • 1 small red onion, finely chopped
  • 2 160g cans princes tuna, drained
  • 1 400g napolina butter beans, drained
  • 1 400g napolina red kidney beans, drained
  • 2 tablespoons of balsamic vinegar
  • 0.5 lemon, juiced
  • 1 handful of chopped flat-leaf parsley

Method

  1. Step 1

    Finely chop the onion and halve the cherry tomatoes and place in a bowl.
  2. Step 2

    Drain the butter beans, kidney beans, sweetcorn and tuna and add to the bowl as well.
  3. Step 3

    Stir the lemon juice, extra virgin olive oil and balsamic vinegar altogether until well mixed.
  4. Step 4

    Pour over the beans and tuna and add the chopped parsley before mixing thoroughly.
  5. Step 5

    Season with salt and pepper before serving.
