
Tuna, Butter Bean and Kidney Bean Salad

This tasty butter bean and kidney bean salad mixed with tuna
and a home-made dressing is perfect for lunches or as a summer evening meal.Time and servings

Ingredients
- 4 tablespoons of napolina extra virgin olive oil
- 1 clove garlic, finely chopped
- 1 sweetcorn, drained
- 150 g of cherry tomato, halved
- 1 small red onion, finely chopped
- 2 160g cans princes tuna, drained
- 1 400g napolina butter beans, drained
- 1 400g napolina red kidney beans, drained
- 2 tablespoons of balsamic vinegar
- 0.5 lemon, juiced
- 1 handful of chopped flat-leaf parsley
Method
Step 1
Finely chop the onion and halve the cherry tomatoes and place in a bowl.Step 2
Drain the butter beans, kidney beans, sweetcorn and tuna and add to the bowl as well.Step 3
Stir the lemon juice, extra virgin olive oil and balsamic vinegar altogether until well mixed.Step 4
Pour over the beans and tuna and add the chopped parsley before mixing thoroughly.Step 5
Season with salt and pepper before serving.
