Tomato and Courgette Frittata

Ingredients
- 1 handful of basil leaves, chopped
- 2 courgettes, grated
- 50 g of cheddar cheese
- 300 g of mixed variety tomatoes
- 8 eggs
- 1 tsp of olive oil
Method
Step 1
Add olive oil to a large frying pan and fry the grated courgette for 2 minutes.Step 2
Mix the eggs, cheese and chopped basil in a bowl. Season well with salt and pepper.Step 3
Pour the egg mixture into the frying pan and mix to combine.Step 4
Allow the egg to cook over a gentle heat for 3 minutes.Step 5
Slice the tomatoes into rounds and arrange on top of the egg mix.Step 6
Preheat the grill to medium and place the frittata under the grill for 5 minutes or until golden brown and cooked through.Step 7
Slice and serve with rocket leaves.
