Tomato and Courgette Frittata

This fresh-tasting frittata is just the thing for picnics or packed lunches.

Ingredients

  • 1 handful of basil leaves, chopped
  • 2 courgettes, grated
  • 50 g of cheddar cheese
  • 300 g of mixed variety tomatoes
  • 8 eggs
  • 1 tsp of olive oil

Method

  1. Step 1

    Add olive oil to a large frying pan and fry the grated courgette for 2 minutes.
  2. Step 2

    Mix the eggs, cheese and chopped basil in a bowl. Season well with salt and pepper.
  3. Step 3

    Pour the egg mixture into the frying pan and mix to combine.
  4. Step 4

    Allow the egg to cook over a gentle heat for 3 minutes.
  5. Step 5

    Slice the tomatoes into rounds and arrange on top of the egg mix.
  6. Step 6

    Preheat the grill to medium and place the frittata under the grill for 5 minutes or until golden brown and cooked through.
  7. Step 7

    Slice and serve with rocket leaves.
