Ingredients

  • 1 large red onion, finely chopped
  • 1 stick celery, finely chopped
  • 1 690g jar napolina passata
  • 1 handful of basil leaves
  • 1 carrot, finely chopped
  • 2 tbsp of napolina olive oil
  • 500 ml of vegetable stock
  • 2 garlic cloves, crushed and finely chopped

Method

  1. Step 1

    Finely chop 1 large red onion, 2 cloves of garlic, 1 carrot and 1 stick of celery
  2. Step 2

    Heat 2 tablespoons of Napolina Olive Oil in a pa.
  3. Step 3

    Add the chopped ingredients and lightly fry for 10 minutes until soft. Add a jar of Napolina Passata.
  4. Step 4

    Take 500ml vegetable stock and add to the pan with salt and black pepper. Simmer for 20 minutes.
  5. Step 5

    Chop a handful of basil leaves and add to the soup, stirring well. Remove from the heat and blend until smooth.
  6. Step 6

    Serve with a basil leaf and crusty bread.
