Tinned Sweetcorn Fritters

A deliciously easy lunch or light tea, these soft spicy and sweet fritters with a tangy and smoky dressing are super tasty served with a simple salad.Time and servings

Ingredients
- 1 tsp of olive oil
- 0.5 juice from 1/2 lemon
- 1 tsp of smoked paprika
- 100 g of yoghurt
- 15 g of handful coriander, chopped (Optional)
- 2 eggs, lightly beaten
- 300 g of sweetcorn kernels
- 1 tsp of chilli powder
- 2 spring onions, trimmed and finely sliced
- 1 tsp of baking powder
- 90 g of plain flour
Method
Step 1
Mix the eggs, flour and drained sweetcorn with the baking powder, spring onions, chili powder and coriander if using - beat together.Step 2
Heat the oil in a pan and drop a tablespoon of the mixture into the oil - be very careful not to splash oil on yourself - and flatten the fritter slightly.Step 3
Repeat until all the mixture is used, once cooked, drain on clean kitchen roll to remove excess oil.Step 4
Mix all the ingredients for the dressing together.Step 5
Serve with some salad leaves and drizzle the dressing over the top.
