Thai Style Turkey Salad

Ingredients
- 0.5 bunch of fresh mint
- 2 tbsp of fish sauce
- 1 small cucumber
- 2 carrots
- 1 tbsp of vegetable oil
- 1 red onion
- 2 red chillies
- 0.5 bunch of fresh coriander
- 2.5 cm of fresh ginger
- 2 cloves of garlic cloves
- 1 tbsp of soft brown sugar
- 50 g of mixed salad leaves
- 3 limes
- 1 tbsp of soy sauce
Method
Step 1
Heat the oil in a large pan, add the ginger and garlic and cook for 1 minute, then add the turkey and cook until piping hot all the way through. Remove from the heat and stir through the soy sauce.Step 2
Prepare the salad by mixing the vegetables, salad leaves and herbs in a large bowl. Mix the lime juice, sugar and fish sauce together, pour over the salad and toss well.Step 3
Pile the salad on to 4 plates, top with turkey and garnish with chilli slices and a lime wedge.
