Ingredients

  • 90g rice noodles (2 nests
  • 2 large carrots, grated
  • 100g mangetout, shredded
  • 50g roasted peanuts, roughly chopped, plus extra to serve
  • 2 green apples, cored and cut into batons
  • 100g radishes, finely sliced
  • 50g smooth peanut butter
  • 2 limes, juiced and zest + wedges to serve
  • 1 small bunch spring onions, finely sliced
  • 1 tbsp maple syrup
  • 25g coriander, roughly chopped, plus extra to serve
  • 2 tbsp sesame oil
  • 2 tbsp fish sauce
  • 1 tbsp soy or tamari
  • 1 tsp finely grated ginger

Method

  1. Step 1

    Cover the rice noodles with boiling water and let sit for 3 mins until softened slightly and then drain.
  2. Step 2

    For the dressing, whisk together the peanut butter, lime juice and zest, maple syrup, sesame oil, fish sauce, soy and ginger together until smooth.
  3. Step 3

    Finally put the noodles, carrots, mangetout, spring onions, coriander, nuts, apple and radishes into a bowl and toss together along with dressing until everything is coated. Serve with a little extra coriander and peanuts on top and lime wedges on the side.
