Ingredients
- 90g rice noodles (2 nests
- 2 large carrots, grated
- 100g mangetout, shredded
- 50g roasted peanuts, roughly chopped, plus extra to serve
- 2 green apples, cored and cut into batons
- 100g radishes, finely sliced
- 50g smooth peanut butter
- 2 limes, juiced and zest + wedges to serve
- 1 small bunch spring onions, finely sliced
- 1 tbsp maple syrup
- 25g coriander, roughly chopped, plus extra to serve
- 2 tbsp sesame oil
- 2 tbsp fish sauce
- 1 tbsp soy or tamari
- 1 tsp finely grated ginger
Method
Step 1
Cover the rice noodles with boiling water and let sit for 3 mins until softened slightly and then drain.Step 2
For the dressing, whisk together the peanut butter, lime juice and zest, maple syrup, sesame oil, fish sauce, soy and ginger together until smooth.Step 3
Finally put the noodles, carrots, mangetout, spring onions, coriander, nuts, apple and radishes into a bowl and toss together along with dressing until everything is coated. Serve with a little extra coriander and peanuts on top and lime wedges on the side.
