Ingredients
- 300g sweetcorn, freshly cooked on the cob or defrosted from frozen
- 1 red pepper, finely chopped
- 1 orange or yellow pepper, finely chopped
- 1 small red onion, finely chopped
- 1 handful cherry tomatoes, quartered
- 1 lime, juiced
- 1/2 red chilli, finely chopped (optional)
- 1 small handful fresh coriander, chopped
- 1 tbsp extra virgin olive oil
Method
Step 1
Place the sweetcorn in a large mixing bowl and add the peppers, red onion, tomatoes, and coriander.Step 2
Then make the dressing in a small bowl or jug by whisking together the lime juice, olive oil, a pinch of salt, and some black pepper. Stir in the chopped chilli if using.Step 3
Finally, pour the dressing over the salad and toss everything together until well coated. Let it sit in the fridge for 15–20 mins to let the flavours mingle, or serve immediately at room temperature and enjoy.
