Ingredients
- 0.5 onion
- 2 vegetable stock cubes
- 700 g of sweet potato
Method
Step 1
Bring 1200ml of water to a rolling boil.Step 2
Cut the sweet potato into small chunks.Step 3
Add all 3 ingredients to the water and boil until the sweet potato is tender (approx 10 minutes).Step 4
Season with salt and pepper and blend with a hand blender or food processor until smooth.Step 5
Serve with crusty bread.
