Ingredients

  • 1 Bag Fresh Chillies
  • 1 Wonky Pepper
  • 1 large sweet potato
  • 300g Savers Rice
  • 1 Morrisons garlic clove
  • 3 Wonky onions
  • 1 tin Savers plum tomatoes
  • 1 Courgette
  • 1 tsp medium curry powder

Method

  1. Step 1

    Place the rice in a bowl and wash the rice under running cold water for 5 minutes.
  2. Step 2

    To make the rice, place the onions, oil, chilli, salt and cook over a low heat until the onions are soft.
  3. Step 3

    Add the rice and water and bring to the boil. Turn the heat down, cover with a lid and cook on a low heat until the rice has absorbed all the water.
  4. Step 4

    Meanwhile, for the curry, add the sliced onions, chilli, pepper, sweet potato, garlic, oil, and salt to a pan and cook over a low heat until the onions are soft.
  5. Step 5

    Mix the curry powder with the water and add to the pan. Roughly chop the tomatoes into large chunks and add the juice and tomatoes to the pan.
  6. Step 6

    Cook the curry until the sweet potato chunks are cooked through. Add the courgettes and sugar and cook until tender.
  7. Step 7

    When you’re ready to serve, remove the rice from the heat and separate and fluff up the rice with a fork. Check the curry is seasoned to your liking and serve.
