These sultana scones are easy to make and are a classic part of an afternoon tea. If you're feeling experimental, golden syrup or lemon curd make a great alternative to jam.

Ingredients

  • 75 g of sultanas
  • 60 g of caster sugar
  • 1 tbsp of baking powder
  • 450 g of plain flour
  • 230 ml of semi-skimmed milk, plus extra for brushing
  • 1 spoon of whipping cream, per scone
  • 1 spoon of jam, to serve
  • 1 egg
  • 60 g of butter, cubed

Method

  1. Step 1

    Preheat the oven to 200°C/400°F/Gas 6.
  2. Step 2

    Sift the flour and baking powder into a bowl. Add the butter and rub into the flour with your fingertips until it resembles fine breadcrumbs.
  3. Step 3

    Stir in the sultanas, sugar and then the milk to form a soft dough.
  4. Step 4

    Lightly dust a clean surface with a little flour and roll out the dough to a 2cm thickness.
  5. Step 5

    Using a 7cm round fluted cutter, stamp out 12 rounds. Arrange on a baking tray and brush the tops with a little milk. Bake for 25 minutes until well risen and golden.
  6. Step 6

    Serve with jam and whipped cream.
