Strawberry Portuguese Tart

The addition of strawberries brings a taste of of home to a traditional Portuguese favourite. The sweetness of the strawberry perfectly balances the salty, silky egg custard filling.

Ingredients

  • 4 large egg yolks
  • 2 tsp of vanilla extract
  • 1 jar of strawberry jam
  • 3 sprays of oil spray for greasing
  • 120 g of golden caster sugar
  • 2.5 tbsp of cornflour
  • 350 ml of full fat milk
  • 1 sheet of sheet ready rolled puff pastry
  • 1 large handful of fresh strawberries to decorate

Method

  1. Step 1

    Pre-heat oven to gas 6, 200°C, fan 180°C and grease a 12 hole muffin tin.
  2. Step 2

    Add sugar, cornflour, milk and a pinch of salt to a pan over a medium heat and whisk continuously for 5-10 mins until thickened. Transfer to a bowl, cool for 20 mins and whisk in the egg yolks and vanilla before straining.
  3. Step 3

    Cut the pastry sheet in half and place each on top of oneanother beffore rolling into a rectangle shape. Cut into 12 rounds and roll each on a floured surface (approx 12cm) before pressing into each muffin hole.
  4. Step 4

    Add a tablespoon of strawberry jam into each case, fill with the egg custard and bake for 25 mins. Top with fresh strawberries and enjoy a summery fusion of Portuguese meets British flavours.
