Stilton and Broccoli Muffins

Baking with broccoli isn't commonplace but it is delicious. This recipe is ideal for autumn with the broccoli and Stilton combining to give the muffins a really great flavour.

Ingredients

  • 20 g of mixed seeds
  • 225 g of self-raising flour
  • 1 medium of egg
  • 140 g of broccoli florets
  • 125 g of stilton, crumbled
  • 150 ml of semi-skimmed milk
  • 60 ml of sunflower oil

Method

  1. Step 1

    Heat the oven to 200°C/180°C fan/Gas 6. Line a muffin tin with 12 paper muffin cases.
  2. Step 2

    Cook the broccoli florets in a pan of water for 5 minutes, drain and mash roughly.
  3. Step 3

    Sift the flour into a mixing bowl, beat together the egg, oil and milk with a little salt and pepper, then pour over the flour and mix to a thick batter. Stir in the broccoli and crumbled cheese.
  4. Step 4

    Divide the mixture between the muffin cases, sprinkle with seeds and bake for 20 minutes, until risen, golden and springy to the touch.
